Ayurvedic Carrot and Lettuce Salad:
X 2-3 medium sized carrots – peeled and then grated
X Lettuce one medium sized – chopped
X 2 tablespoons boiled cooked rice
X Ghee – 2 to 3 teaspoons
X Cumin seeds ¼ teaspoon
X Mustard seeds – ¼ teaspoon
X One green chilli as a whole– just as it is. If you want the salad to have slight bit spice, cut green chilli in two pieces
X 1 teaspoon fresh chopped ginger
X 1 pod garlic chopped – optional
X ½ inch turmeric root chopped
X Salt to taste
X Black pepper to taste
X Lemon juice ½ teaspoon
X Jaggery/brown sugar
Instructions:
X In a mixing bowl add grated carrots and chopped lettuce.
X Add boiled water to it and leave in for 3-5 minutes until both carrots and lettuce go soft.
X Completely drain water out. Don’t let any water remain.
X Then add lemon juice, salt black pepper, jaggery/brown sugar. Keep aside.
Salad Dressing:
X In a small pan heat ghee until very hot.
X Add cumin seeds, mustard seeds, chilli, ginger, garlic, turmeric.
X Cook until golden brown.
X Add the ghee with spices to the bowl of carrots and lettuce along with cooked rice.
X Mix well.
X Garnish with coriander and consume while still warm.
