AYURVEDIC CARROT AND LETTUCE SALAD

Ayurvedic Carrot and Lettuce Salad:

X 2-3 medium sized carrots – peeled and then grated
X Lettuce one medium sized – chopped
X 2 tablespoons boiled cooked rice

carrot lettuce 1Ghee  – 2 to 3 teaspoons
Cumin seeds ¼ teaspoon
Mustard seeds – ¼ teaspoon
One green chilli as a whole– just as it is. If you want the salad to have slight bit spice, cut green chilli in two pieces
1 teaspoon fresh chopped ginger
1 pod garlic chopped – optional
½ inch turmeric root chopped
Salt to taste
Black pepper to taste
Lemon juice ½ teaspoon
Jaggery/brown sugar

Instructions:

In a mixing bowl add grated carrots and chopped lettuce.
Add boiled water to it and leave in for 3-5 minutes until both carrots and lettuce go soft.
Completely drain water out. Don’t let any water remain.
Then add lemon juice, salt black pepper, jaggery/brown sugar. Keep aside.

Salad Dressing:

In a small pan heat ghee until very hot.
Add cumin seeds, mustard seeds, chilli, ginger, garlic, turmeric.
Cook until golden brown.
Add the ghee with spices to the bowl of carrots and lettuce along with cooked rice.
Mix well.
Garnish with coriander and consume while still warm.
