Ayurvedic Stir Fry Okra
Ingredients:
O Okra – 350 gms chopped keep aside. Make sure it’s been properly dried before chopping. If there is water then the okra stir-fry will be slimy consistency.
O Oil 3- 4 tablespoon
O Onions – medium sized – 3 peeled and finely chopped
O Cumin seeds – 1/4 teaspoon
O Mustard seeds – 1/4 teaspoon
O Turmeric – 1 to 2 teaspoons
O Red chilli powder – 1/2 to 1 teaspoon
O Ginger paste – 2 teaspoon
O Garlic paste – 1 teaspoon
O Garam masala – 1/2 teaspoon
O Cumin powder – 1/2 teaspoon
O Salt – to taste
Instructions:
O Heat up the oil to hot
O Heat should be moderate to high
O Add cumin seeds and mustard seeds so that they pop
O Add chopped onions and fry until golden brown
O Add turmeric powder and red chilli powder and stir fry for 3 – 4 minutes
O Add ginger paste and garlic paste and cook for 5-7 minutes
O Add okra and stir for 2 minutes.
O Add salt to taste while okra is still raw. The salt added helps to get rid of the slimy consistency
O Reduce flame to low to moderate. Close the pan with lid and let it cook for 5 minutes.
Remove lid and stir properly.
O Add garam masala and cumin powder and cook for further 5 minutes.
O In the beginning Okra will have slimy consistency, but continuous stirring for a minute and then closing with lid for 2 minutes will help to get rid of the slimy consistency.
O With Okra, one should be patient and let it cook until soft/crispy without any slime. You can add coriander to garnish.
O Best eaten with cooked rice and daal. You can also eat it with chapathi or roti.
