TURMERIC SPICED POTATOES

Turmeric Spiced Potatoes

Ingredients:

  • 6 – 8medium sized potatoes
  • 2-3 table spoon cooking oil
  • 1/4th tspn cumin seeds
  • 1/4th tspn mustard seeds
  • 6-5 curry leaves – optional
  • 1-2 whole green chillies – optional
  • 1-2 tspn turmeric powder
  • Salt to taste
  • Chopped coriander handful
  • 1 tspn Jaggery or brown sugar
  • 1 tspn lemon juice

Instructions:

Potatoes:

  • Boil the potatoes until medium soft.
  • Remove/peel the skin
  • Cut into small to medium cubes
  • Set aside

Main Instructions:

  • Heat the oil to quite hot
  • Add cumin and mustard seeds
  • Add curry leaves and green chillies
  • Add ¼ tspn turmeric powder.
  • Mix well
  • Immediately add the potatoes
  • Stir well
  • Add the rest of turmeric and mix well so that turmeric covers all the potatoes
  • Cover with lid and cook for 10 minutes over medium heat
  • Keep stirring occasionally
  • Add salt to taste
  • Add jaggery or brown sugar
  • Add lemon juice
  • Stir well
  • Add coriander towards the end and cook for another 5-1- minutes on low heat and covered with a lid


Serve hot with:

  • Puri
  • Chapathi
  • Cumin rice
  • Rice and Daal
  • Serve all above with steamed salad on the side
