Ayurvedic Carrot and Red Lentil Soup
Ingredients:
O Two medium to big sized carrots chopped
O 2 cups red lentils
O 3 table spoon oil or ghee
O Cumin seeds ½ teaspoon
O Mustard seed ½ teaspoon
O Fresh ginger ½ inch
O 2 pods garlic chopped
O 1 – 2 teaspoon turmeric
O ½ teaspoon red chilli powder
O 1 – 2 teaspoon cumin powder
O Chopped coriander
O Salt to taste
O ¼ teaspoon brown sugar or jaggery
Boil the carrots in water for 10 – 15 minutes, set aside
Soak red lentils in hot water and set aside
Instructions:
O Heat a pan
O Cook oil or ghee until hot
O Add cumin seeds, mustard seeds, ginger, garlic and stir for 2 minutes until they golden brown
O Add carrots
O Add turmeric and red chilli powder and stir for 5 minutes
O Add red lentils and stir for 5 minutes
O Add cumin powder and cook for 10 minutes
O Add salt and brown sugar/jaggery
O Add water, close with lid and cook until red lentils become soft
When red lentils are soft and cooked, remove from fire. Cool down for 10 minutes and then blend to make a smooth consistency soup.
Serving Suggestion:
Garnish with fresh coriander
Please eat this with small amount of rice but plenty of salad.
